Ingredients

Original recipe serves 6

Lime
1, juiced
Cilantro
1/2 cup, chopped
Vegetable oil
2 tablespoons
All-purpose flour
2 tablespoons
Salt and pepper
to taste
Oregano
1 tablespoon, dried
Cumin
1 teaspoon, ground
Chicken broth
4 cups
Garlic
3 cloves, minced
Onion
1 large, chopped
Green chilies
2 cups, roasted, peeled, and chopped
Pork shoulder
2 pounds, cubed

Instructions

  1. In a large pot, heat the vegetable oil over medium-high heat.
  2. Season the pork cubes with salt and pepper.
  3. Brown the seasoned pork cubes on all sides in the heated pot, then remove and set aside.
  4. In the same pot, add the chopped onion and minced garlic, cooking until the onion becomes translucent.
  5. Stir in the flour, cumin, and oregano, cooking for 1 minute while stirring constantly.
  6. Gradually pour in the chicken broth, stirring continuously to combine and remove any lumps.
  7. Add the roasted green chilies to the pot and bring the mixture to a simmer.
  8. Return the browned pork cubes to the pot, stirring to coat them with the sauce.
  9. Cover the pot and let it simmer on low heat for 2 hours, until the pork becomes tender and the flavors meld together.
  10. Stir in the chopped cilantro and lime juice. Adjust the seasoning if necessary.
  11. Serve the Chile Verde hot, paired with rice, tortillas, and your favorite toppings.
