Ingredients
- Lime
- 1, juiced
- Cilantro
- 1/2 cup, chopped
- Vegetable oil
- 2 tablespoons
- All-purpose flour
- 2 tablespoons
- Salt and pepper

- 1 tablespoon, dried
- Cumin
- 1 teaspoon, ground
- Chicken broth
- 4 cups
- Garlic
- 3 cloves, minced
- Onion
- 1 large, chopped
- Green chilies
- 2 cups, roasted, peeled, and chopped
- Pork shoulder
- 2 pounds, cubed
Instructions
- In a large pot, heat the vegetable oil over medium-high heat.
- Season the pork cubes with salt and pepper.
- Brown the seasoned pork cubes on all sides in the heated pot, then remove and set aside.
- In the same pot, add the chopped onion and minced garlic, cooking until the onion becomes translucent.
- Stir in the flour, cumin, and oregano, cooking for 1 minute while stirring constantly.
- Gradually pour in the chicken broth, stirring continuously to combine and remove any lumps.
- Add the roasted green chilies to the pot and bring the mixture to a simmer.
- Return the browned pork cubes to the pot, stirring to coat them with the sauce.
- Cover the pot and let it simmer on low heat for 2 hours, until the pork becomes tender and the flavors meld together.
- Stir in the chopped cilantro and lime juice. Adjust the seasoning if necessary.
- Serve the Chile Verde hot, paired with rice, tortillas, and your favorite toppings.
