Chimichurri Steak Sandwiches

These delicious chimichurri steak sandwiches are packed with flavor and perfect for a satisfying meal.

Ingredients

  • Red onion (1/2, thinly sliced)
  • Tomato (1, sliced)
  • Lettuce (4 leaves)
  • Baguette (4 small, sliced)
  • Salt and pepper (to taste)
  • Red pepper flakes (1/2 teaspoon)
  • Fresh oregano (1 tablespoon, chopped)
  • Fresh cilantro (1/4 cup, chopped)
  • Fresh parsley (1/2 cup, chopped)
  • Red wine vinegar (2 tablespoons)
  • Garlic (3 cloves, minced)
  • Olive oil (2 tablespoons)
  • Flank steak (1 pound)

Instructions

  1. Preheat the grill or grill pan over medium-high heat.
  2. Season the flank steak with salt and pepper.
  3. In a small bowl, combine the olive oil, minced garlic, red wine vinegar, chopped parsley, chopped cilantro, chopped oregano, red pepper flakes, salt, and pepper to make the chimichurri sauce.
  4. Grill the flank steak for about 4-5 minutes per side, or until desired doneness.
  5. Remove the steak from the grill and let it rest for a few minutes.
  6. Slice the steak against the grain into thin strips.
  7. Spread a generous amount of chimichurri sauce on one side of each baguette slice.
  8. Layer the sliced steak, lettuce, tomato, and red onion on top of the chimichurri-spread baguette slices.
  9. Top with another baguette slice to make a sandwich.
  10. Serve the chimichurri steak sandwiches and enjoy!
