Chiura: Nepali Crispy Beaten Rice Snack

Ingredients
- Lemon juice
- 1 tablespoon
- Fresh coriander leaves
- a handful, finely chopped
- Salt
- 1 teaspoon, or to taste
- Turmeric powder
- 1/2 teaspoon
- Mustard seeds
- 1 teaspoon
- Cumin seeds
- 1 teaspoon
- Oil
- 2 tablespoons
- Beaten rice (chiura)
- 2 cups
Instructions
- Heat oil in a pan over medium heat.
- Once the oil is hot, add the cumin seeds and mustard seeds. Allow them to splutter to release their flavors.
- Stir in the turmeric powder, making sure to mix it well with the oil and seeds.
- Add the beaten rice (chiura) and salt to the pan. Mix everything together, ensuring that the chiura is well coated with the spices.
- Cook the mixture for 5-7 minutes, stirring occasionally, until the chiura becomes crispy.
- Remove the pan from the heat and allow the chiura to cool.
- Sprinkle the crispy chiura with freshly chopped coriander leaves, and drizzle the lemon juice all over.
- Toss the chiura well to combine all the ingredients. It's ready to serve as a snack or with your favorite cup of tea.
