Lemon juice
1 tablespoon
Fresh coriander leaves
a handful, finely chopped
Salt
1 teaspoon, or to taste
Turmeric powder
1/2 teaspoon
Mustard seeds
1 teaspoon
Cumin seeds
1 teaspoon
Oil
2 tablespoons
Beaten rice (chiura)
2 cups

Instructions

  1. Heat oil in a pan over medium heat.
  2. Once the oil is hot, add the cumin seeds and mustard seeds. Allow them to splutter to release their flavors.
  3. Stir in the turmeric powder, making sure to mix it well with the oil and seeds.
  4. Add the beaten rice (chiura) and salt to the pan. Mix everything together, ensuring that the chiura is well coated with the spices.
  5. Cook the mixture for 5-7 minutes, stirring occasionally, until the chiura becomes crispy.
  6. Remove the pan from the heat and allow the chiura to cool.
  7. Sprinkle the crispy chiura with freshly chopped coriander leaves, and drizzle the lemon juice all over.
  8. Toss the chiura well to combine all the ingredients. It's ready to serve as a snack or with your favorite cup of tea.
