Instructions
- In a large bowl, combine the fresh choclo kernels, diced tomatoes, finely chopped red onion, and freshly chopped cilantro. Toss gently to mix.
- In a separate small bowl, prepare the dressing. Whisk together the freshly squeezed lime juice, olive oil, salt, and black pepper until well combined.
- Drizzle the dressing over the choclo mixture. Toss the salad gently to ensure every ingredient is coated with the dressing.
- Cover the bowl and refrigerate for at least 30 minutes. This allows the flavors to meld together, creating a more harmonious taste.
- Serve the Choclo Salad chilled. This dish makes a great side for grilled meats or can be enjoyed on its own for a light, healthy meal.
Tips
- For a spicier kick, add a finely chopped jalapeno or serrano pepper to the salad.
- Can't find choclo? Regular sweet corn can be used as a substitute, though it will slightly alter the flavor.
- For an added layer of flavor, you can grill the choclo before removing the kernels.
