- Choclo Kernels

- 2 tablespoons, freshly squeezed
- Olive Oil
- 1 tablespoon
- Salt

Instructions
- In a large bowl, combine the fresh choclo kernels, diced tomatoes, finely chopped red onion, and freshly chopped cilantro. Toss gently to mix.
- In a separate small bowl, prepare the dressing. Whisk together the freshly squeezed lime juice, olive oil, salt, and black pepper until well combined.
- Drizzle the dressing over the choclo mixture. Toss the salad gently to ensure every ingredient is coated with the dressing.
