Choclo Kernels
2 cups, freshly removed from cob
Tomatoes
2, medium-sized, diced
Red Onion
1, small, finely chopped
Cilantro
1/2 cup, freshly chopped
Lime Juice
2 tablespoons, freshly squeezed
Olive Oil
1 tablespoon
Salt
1/2 teaspoon, or to taste
Black Pepper
1/4 teaspoon, freshly ground

Instructions

  1. In a large bowl, combine the fresh choclo kernels, diced tomatoes, finely chopped red onion, and freshly chopped cilantro. Toss gently to mix.
  2. In a separate small bowl, prepare the dressing. Whisk together the freshly squeezed lime juice, olive oil, salt, and black pepper until well combined.
  3. Drizzle the dressing over the choclo mixture. Toss the salad gently to ensure every ingredient is coated with the dressing.
