Ingredients
- Vanilla ice cream (2 cups)
- Chocolate chips (1 cup, semi-sweet)
- Baking soda (1/2 teaspoon)
- Salt (1/4 teaspoon)
- Vanilla extract (1 teaspoon)
- Brown sugar (1/2 cup, packed)
- Granulated sugar (1/4 cup)
- Unsalted butter (1/2 cup, softened)
- All-purpose flour (1 cup)
Instructions
- In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy, about 3-4 minutes.
- Add in the vanilla extract and mix until well incorporated.
- In a separate bowl, whisk together the all-purpose flour, salt, and baking soda until evenly combined.
- Gradually add the dry ingredients to the butter mixture, mixing until just combined; be careful not to overmix.
- Fold in the chocolate chips until evenly distributed throughout the dough.
- Divide the cookie dough in half and shape each half into a rectangular slab, about 1/2 inch thick.
- Wrap the cookie dough slabs in plastic wrap and refrigerate for at least 1 hour to firm up.
- Preheat the oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- Remove the cookie dough slabs from the refrigerator and slice each slab into 16 equal squares.
- Place the cookie dough squares onto the prepared baking sheet, leaving enough space between each square for spreading.
- Bake for 10-12 minutes, or until the edges are golden brown and the centers are still slightly soft.
- Allow the cookies to cool completely on a wire rack.
- Once the cookies are cooled, remove the vanilla ice cream from the freezer and let it soften slightly, about 5 minutes.
- Scoop a generous amount of ice cream onto the bottom side of one cookie, about 1/4 cup.
- Place another cookie on top, bottom side down, and gently press down to create a sandwich.
- Repeat with the remaining cookies and ice cream until all sandwiches are assembled.
- Wrap each ice cream sandwich in plastic wrap and freeze for at least 2 hours before serving to harden.
