Ingredients

Unsalted butter
1/2 cup, softened
Brown sugar
3/4 cup, firmly packed
Vanilla extract
1 teaspoon
Salt
1/2 teaspoon
All-purpose flour
2 cups
Mini chocolate chips
1 cup, plus extra for topping
Semi-sweet chocolate
2 cups, chopped

Instructions

  1. In a large mixing bowl, cream together the softened unsalted butter and firmly packed brown sugar until it becomes light and fluffy.
  2. Mix in the vanilla extract.
  3. Gradually add the all-purpose flour and salt into the butter mixture, mixing until a dough forms.
  4. Gently fold in the mini chocolate chips into the dough.
  5. Using a small cookie scoop or your hands, shape the dough into small truffle-sized balls and arrange them on a baking sheet lined with parchment paper.
  6. Chill the dough balls in the freezer for about 15 minutes to firm up.
  7. While the truffles are chilling, melt the chopped semi-sweet chocolate in a microwave-safe bowl. Do this in 30-second intervals, stirring in between, until the chocolate is smooth and fully melted.
