Decadent Chocolate Chip Cookie Dough Truffles

Ingredients
- Unsalted butter
- 1/2 cup, softened
- Brown sugar
- 3/4 cup, firmly packed
- Vanilla extract
- 1 teaspoon
- Salt
- 1/2 teaspoon
- All-purpose flour
- 2 cups
- Mini chocolate chips
- 1 cup, plus extra for topping
- Semi-sweet chocolate
- 2 cups, chopped
Instructions
- In a large mixing bowl, cream together the softened unsalted butter and firmly packed brown sugar until it becomes light and fluffy.
- Mix in the vanilla extract.
- Gradually add the all-purpose flour and salt into the butter mixture, mixing until a dough forms.
- Gently fold in the mini chocolate chips into the dough.
- Using a small cookie scoop or your hands, shape the dough into small truffle-sized balls and arrange them on a baking sheet lined with parchment paper.
- Chill the dough balls in the freezer for about 15 minutes to firm up.
- While the truffles are chilling, melt the chopped semi-sweet chocolate in a microwave-safe bowl. Do this in 30-second intervals, stirring in between, until the chocolate is smooth and fully melted.
- Once the truffles are firm, dip each one into the melted chocolate using a fork or dipping tool, ensuring they are fully coated. Shake off any excess chocolate before placing them back on the lined baking sheet.
- Immediately sprinkle the freshly coated truffles with extra mini chocolate chips.
- Refrigerate the truffles for at least 30 minutes, or until the chocolate has completely set.
