Classic Chocolate Chip Cookie Pie

Ingredients
- Pie crust
- 1 (9-inch)
- Chocolate chips
- 1 cup
- Vanilla extract
- 1 teaspoon
- Egg
- 1
- Brown sugar
- 1/2 cup
- Granulated sugar
- 1/2 cup
- Unsalted butter
- 1/2 cup, softened
- Salt
- 1/2 teaspoon
- Baking powder
- 1 teaspoon
- All-purpose flour
- 1 cup
Instructions
- Preheat the oven to 350°F (175°C) and position a rack in the middle of the oven.
- In a small bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy. This should take about 2-3 minutes with an electric mixer.
- Beat in the egg and vanilla extract until well combined.
- While the mixer is running on low speed, gradually add the dry ingredients to the wet ingredients. Be careful not to overmix. Stop when just combined.
- Gently fold in the chocolate chips with a spatula.
- Press the pie crust into a 9-inch pie dish, making sure it is evenly spread.
- Pour the cookie dough into the pie crust and spread it evenly with a spatula.
- Bake for 35-40 minutes, or until the top is golden brown and the center is set. If the top is browning too quickly, cover loosely with aluminum foil.
- Remove from the oven and let the pie cool for at least 30 minutes before serving. This allows the filling to set properly.
- Serve warm or at room temperature. For an extra indulgence, top with a scoop of vanilla ice cream or a dollop of whipped cream.
