Serves 8

Ingredients

Pie crust
1 (9-inch)
Chocolate chips
1 cup
Vanilla extract
1 teaspoon
Egg
1
Brown sugar
1/2 cup
Granulated sugar
1/2 cup
Unsalted butter
1/2 cup, softened
Salt
1/2 teaspoon
Baking powder
1 teaspoon
All-purpose flour
1 cup

Instructions

  1. Preheat the oven to 350°F (175°C) and position a rack in the middle of the oven.
  2. In a small bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy. This should take about 2-3 minutes with an electric mixer.
  4. Beat in the egg and vanilla extract until well combined.
  5. While the mixer is running on low speed, gradually add the dry ingredients to the wet ingredients. Be careful not to overmix. Stop when just combined.
  6. Gently fold in the chocolate chips with a spatula.
  7. Press the pie crust into a 9-inch pie dish, making sure it is evenly spread.
  8. Pour the cookie dough into the pie crust and spread it evenly with a spatula.
  9. Bake for 35-40 minutes, or until the top is golden brown and the center is set. If the top is browning too quickly, cover loosely with aluminum foil.
  10. Remove from the oven and let the pie cool for at least 30 minutes before serving. This allows the filling to set properly.
  11. Serve warm or at room temperature. For an extra indulgence, top with a scoop of vanilla ice cream or a dollop of whipped cream.

Tips

  • 💡 Using room temperature butter and egg will result in a smoother, more homogenous dough.
  • 💡 The pie is done when a toothpick inserted into the center comes out clean or with a few moist crumbs.
