Instructions
- In a shallow dish, pour the brewed coffee and let it cool to room temperature.
- In a mixing bowl, beat the mascarpone cheese with an electric mixer until smooth and creamy.
- In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form.
- Gently fold the whipped cream into the mascarpone cheese until well combined and airy.
- Dip each ladyfinger into the cooled coffee, ensuring to coat both sides without soaking them, and arrange them in a single layer in a 9x13 inch serving dish.
- Spread half of the mascarpone mixture over the layer of ladyfingers, smoothing it out evenly.
- Sprinkle half of the chocolate chips over the mascarpone layer.
- Repeat the process with another layer of ladyfingers, the remaining mascarpone mixture, and the rest of the chocolate chips.
- Dust the top layer with cocoa powder to finish.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the dessert to firm up.
- Serve chilled, slicing into squares or scooping into bowls, and enjoy the delightful layers of flavor!
Tips
- For a stronger coffee flavor, use espresso instead of brewed coffee.
- You can substitute half of the mascarpone with ricotta cheese for a lighter texture.
- Add a splash of coffee liqueur to the coffee for an adult twist.
