Unsalted butter
1/2 cup (1 stick), plus extra for greasing
Semi-sweet chocolate
6 ounces, chopped
Powdered sugar
1 cup
All-purpose flour
1/4 cup
Vanilla extract
1 teaspoon
Eggs
2 large
Egg yolks
2 large

Instructions

  1. Preheat your oven to 425°F (220°C) and generously grease four custard cups with unsalted butter.
  2. In a microwave-safe bowl, combine the chopped semi-sweet chocolate and butter. Microwave in 30-second intervals, stirring after each interval until the mixture is completely melted and smooth.
  3. Stir in the powdered sugar until well blended and the mixture is glossy.
  4. Whisk in the whole eggs and egg yolks, followed by the vanilla extract until fully combined.
  5. Gently fold in the flour until just combined; be careful not to overmix.
  6. Divide the batter equally among the prepared custard cups, filling each about 3/4 full.
  7. Place the custard cups on a baking sheet and bake for 12-14 minutes, until the edges are firm but the centers are still soft.
  8. Let the cakes stand for 1 minute before inverting onto dessert plates. Serve immediately to enjoy the warm, flowing chocolate center.
