Ingredients

Chorizo sausage
1 pound, casing removed
Corn tortillas
8 small
Onion
1 medium, diced
Bell pepper
1 medium, diced (red or green)
Garlic
2 cloves, minced
Avocado
1, sliced
Fresh cilantro
1/4 cup, chopped
Lime
1, juiced
Salt
to taste
Black pepper
to taste
Salsa
1 cup (store-bought or homemade)

Instructions

  1. In a skillet over medium heat, cook the chorizo sausage until browned and cooked through, about 8-10 minutes, breaking it apart with a spatula.
  2. Once cooked, remove the chorizo from the skillet and set aside, leaving the rendered fat in the pan for added flavor.
  3. In the same skillet, add diced onion, bell pepper, and minced garlic. Sauté until softened and fragrant, about 5 minutes.
  4. Return the cooked chorizo to the skillet and stir to combine with the vegetables. Cook for an additional 2-3 minutes to meld the flavors.
  5. In a separate skillet or on a hot griddle, warm the corn tortillas for about 30 seconds on each side until pliable.
