Ingredients

Original recipe serves 4

Olive oil
2 tablespoons
Chorizo sausage
1 pound, sliced into 1/2 inch thick rounds
Garlic
3 cloves, minced
Red wine
1 cup, preferably spanish, such as rioja
Paprika
1 teaspoon
Salt
1/2 teaspoon
Ground Black Pepper
1/4 teaspoon
Fresh parsley
2 tablespoons, finely chopped for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chorizo sausage slices to the skillet and cook until they are well-browned, around 5 minutes.
  3. Add the minced garlic to the skillet and stir it into the chorizo, cooking for an additional 1 minute until fragrant.
  4. Pour in the red wine, then sprinkle in the paprika, salt, and pepper, stirring well to combine.
  5. Reduce the heat to low and let the mixture simmer for 10-15 minutes, or until the chorizo is cooked through and the wine has reduced to a thick sauce coating the sausage.
  6. Remove the skillet from heat and let the dish cool slightly before garnishing with fresh parsley. Serve warm as an appetizer or tapas dish.
