Instructions
- In a large pot, heat the olive oil over medium heat. Add the sliced chorizo sausage and cook until browned and slightly crispy, about 5-7 minutes. Remove the chorizo from the pot and set aside, leaving the rendered fat in the pot.
- In the same pot, add the chopped onion, minced garlic, and diced bell pepper. Sauté until the vegetables are softened and fragrant, about 5 minutes.
