Ingredients

Cilantro
a handful, roughly chopped
Salt and pepper

Salsa
1/4 cup
Avocado
1, sliced
Cheddar cheese
1 cup, shredded
Tortillas
4, large
Eggs
4, large
Chorizo
1/2 pound, casing removed

Instructions

  1. In a large skillet, cook the chorizo over medium heat until it is browned and fully cooked. This should take about 7-8 minutes.
  2. Using a slotted spoon, remove the chorizo from the skillet and set it aside. Leave the rendered fat in the skillet.
  3. In the same skillet, crack the eggs and scramble them in the chorizo fat until cooked to your liking. Season with salt and pepper.
  4. While the eggs are cooking, warm the tortillas in a dry skillet over low heat or in the microwave for 15 seconds.
  5. Once everything is ready, lay out the warmed tortillas. Evenly distribute the scrambled eggs, cooked chorizo, shredded cheese, avocado slices, and salsa in the center of each tortilla.
  6. Fold in the sides of the tortilla and roll it up tightly to form a burrito.
  7. For an extra flavor boost, you can heat the rolled burrito in a skillet over medium heat or in a preheated oven at 350°F (175°C) for a few minutes. This will melt the cheese and crisp up the tortilla.
