Instructions
- In a medium saucepan, combine water, unsalted butter, granulated sugar, and salt. Bring to a rolling boil over medium heat.
- Remove the saucepan from heat and quickly stir in the all-purpose flour until the mixture forms a smooth ball of dough.
- Allow the dough to cool slightly before adding the eggs, one at a time, mixing well after each addition until fully incorporated and the dough is smooth and glossy.
- Transfer the dough to a piping bag fitted with a large star tip.
- In a deep pan or fryer, heat vegetable oil to 375°F (190°C) for frying.
- Pipe 4-inch long churros directly into the hot oil, cutting them with scissors. Fry the churros until golden brown, about 2-3 minutes per side.
- Using a slotted spoon, remove the churros and drain them on paper towels.
- In a microwave-safe bowl, combine the chopped dark chocolate and heavy cream. Heat in the microwave in 30-second intervals, stirring in between, until smooth and fully melted. Allow to cool slightly to thicken.
- Using a small piping bag or a ziplock bag with the corner snipped off, carefully fill each churro with the chocolate ganache.
- Roll the filled churros in cinnamon sugar for added sweetness and flavor.
- Serve warm and enjoy the delightful combination of crispy churros and luscious chocolate filling!
Tips
- For an extra kick, add a pinch of cayenne pepper to the chocolate ganache for a spicy twist.
- You can also experiment with different fillings, such as dulce de leche or vanilla pastry cream.
- Serve the churros with a side of hot chocolate for dipping to elevate the experience.
