Mango Chutney

Ingredients
- Ripe mangoes
- 3 cups, diced
- Red onion
- 1 medium, finely chopped
- Fresh ginger
- 1 tablespoon, grated
- Garlic
- 2 cloves, minced
- Apple cider vinegar
- 1/2 cup
- Brown sugar
- 1/3 cup
- Raisins
- 1/2 cup
- Ground cumin
- 1 teaspoon
- Ground coriander
- 1 teaspoon
- Cayenne pepper
- 1/4 teaspoon (adjust to taste)
- Salt
- 1/2 teaspoon
Instructions
- In a large saucepan, combine the diced mangoes, chopped red onion, grated ginger, minced garlic, apple cider vinegar, brown sugar, raisins, ground cumin, ground coriander, cayenne pepper, and salt.
- Bring the mixture to a boil over medium heat, stirring occasionally to dissolve the sugar and combine the flavors.
- Once boiling, reduce the heat to low and let the chutney simmer for 30 minutes. Stir occasionally to prevent sticking, and allow the flavors to meld together.
- Remove the saucepan from heat and let the chutney cool completely at room temperature.
- Transfer the cooled chutney to sterilized jars, sealing them tightly. Refrigerate for at least 24 hours before serving to allow the flavors to develop further.
