Ingredients

Ripe mangoes
3 cups, diced
Red onion
1 medium, finely chopped
Fresh ginger
1 tablespoon, grated
Garlic
2 cloves, minced
Apple cider vinegar
1/2 cup
Brown sugar
1/3 cup
Raisins
1/2 cup
Ground cumin
1 teaspoon
Ground coriander
1 teaspoon
Cayenne pepper
1/4 teaspoon (adjust to taste)
Salt
1/2 teaspoon

Instructions

  1. In a large saucepan, combine the diced mangoes, chopped red onion, grated ginger, minced garlic, apple cider vinegar, brown sugar, raisins, ground cumin, ground coriander, cayenne pepper, and salt.
  2. Bring the mixture to a boil over medium heat, stirring occasionally to dissolve the sugar and combine the flavors.
  3. Once boiling, reduce the heat to low and let the chutney simmer for 30 minutes. Stir occasionally to prevent sticking, and allow the flavors to meld together.
  4. Remove the saucepan from heat and let the chutney cool completely at room temperature.
  5. Transfer the cooled chutney to sterilized jars, sealing them tightly. Refrigerate for at least 24 hours before serving to allow the flavors to develop further.
