Zesty Cilantro Lime Chicken

Ingredients

  • Salt (1 teaspoon or to taste)
  • Black pepper (1/2 teaspoon)
  • Olive oil (2 tablespoons)
  • Garlic (3 cloves, minced)
  • Cilantro (1 cup, finely chopped)
  • Lime juice (juice of 2 limes)
  • Chicken breasts (4, boneless and skinless)

Instructions

  1. In a medium bowl, mix together the freshly squeezed lime juice, finely chopped cilantro, minced garlic, olive oil, salt, and pepper. This will form your marinade.
  2. Add the chicken breasts to the marinade, making sure to coat them well. Let them soak in the marinade for at least 30 minutes, or up to 24 hours in the refrigerator for maximum flavor.
  3. Preheat your grill to medium-high heat. If you're using a grill pan on the stovetop, set it over medium heat.
  4. Grill the chicken breasts for about 7 minutes on each side, or until the internal temperature reaches 165°F as measured by a meat thermometer. If you’re using a stove-top grill pan, cover the pan for the first 5 minutes of cooking to ensure the chicken cooks evenly.
  5. Remove the chicken from the grill and let it rest for a few minutes before serving. This allows the juices to redistribute, resulting in a moister chicken breast.
