Ingredients

Original recipe serves 4

Basmati rice
1 cup
Water
2 cups
Vegetable oil
2 tablespoons
Fresh cilantro leaves
1/2 cup, chopped
Lime juice
2 tablespoons, freshly squeezed
Salt
1 teaspoon, or to taste

Instructions

  1. Rinse the basmati rice under cold water in a fine-mesh strainer until the water runs clear to remove excess starch.
  2. In a medium saucepan, bring 2 cups of water to a boil. Add 1 teaspoon of salt to the water.
  3. Add the rinsed basmati rice to the boiling water and reduce the heat to low. Cover and simmer for 15-20 minutes, or until the rice is tender and the water is fully absorbed.
  4. Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes to allow the rice to steam.
  5. In a separate bowl, combine the chopped cilantro, lime juice, and vegetable oil. Mix well to create a flavorful dressing.
  6. Fluff the cooked rice with a fork and gently fold in the cilantro mixture until well combined, ensuring the rice is evenly coated.
  7. Serve the cilantro lime basmati rice hot as a side dish, garnished with additional cilantro if desired.

Tips

  • 💡 For extra flavor, consider adding sautéed garlic or onions to the rice while it cooks.
  • 💡 If you like a bit of heat, add a finely chopped jalapeño to the cilantro mixture.
  • 💡 This cilantro rice pairs beautifully with grilled chicken, fish tacos, or as a bed for a fresh salad.
