Serves 4

Ingredients

Bacon
4 slices
Eggs
4 large
Salt
to taste
Black pepper
to taste
Flour tortillas
4 (10-inch)
Cheddar cheese
1 cup, shredded
Tomato
1 medium, diced
Avocado
1 medium, sliced
Salsa
1/2 cup

Instructions

  1. In a large skillet, cook the bacon over medium heat until crispy, about 7-10 minutes. Remove the bacon from the skillet and place it on paper towels to drain excess grease.
  2. In the same skillet, using the bacon drippings, crack the eggs and cook to your desired doneness. Season with salt and black pepper. For scrambled eggs, whisk the eggs in a bowl before pouring them into the skillet, stirring occasionally until they are fluffy and cooked through.
  3. Warm the flour tortillas in a separate skillet over low heat or in the microwave for about 15 seconds until pliable.
  4. On each tortilla, layer the cooked bacon, scrambled eggs, shredded cheddar cheese, diced tomato, sliced avocado, and salsa in the center.
  5. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to form a burrito. Ensure the filling is securely wrapped inside.
  6. Serve the bacon and egg burritos warm, optionally with extra salsa or hot sauce on the side for dipping. Enjoy your delicious breakfast!

Tips

  • 💡 For a spicier kick, add jalapeños or hot sauce to the filling.
  • 💡 You can substitute turkey bacon or a meat alternative for a lighter version.
  • 💡 Feel free to add other toppings like sour cream, fresh cilantro, or a squeeze of lime juice for extra flavor.
