Classic Beef Stroganoff

A traditional Russian dish of sautéed pieces of beef served in a sauce with sour cream. From its origins in mid-19th-century Russia, it has become popular around the world.

Ingredients

  • Parsley (for garnish)
  • Salt and pepper (to taste)
  • Sour cream (1 cup)
  • Dijon mustard (1 tablespoon)
  • Worcestershire sauce (1 tablespoon)
  • Beef broth (1 cup)
  • Garlic (2 cloves, minced)
  • Mushrooms (1 cup, sliced)
  • Onions (1 large, thinly sliced)
  • Butter (4 tablespoons)
  • Beef sirloin steak (1 pound, thinly sliced)

Instructions

  1. In a large skillet over medium heat, melt the butter. Add the beef and cook until browned on all sides. Remove from the skillet and set aside.
  2. In the same skillet, add the onions, mushrooms, and garlic. Cook until the onions are soft and the mushrooms are browned.
  3. Add the beef broth, Worcestershire sauce, and Dijon mustard to the skillet. Bring to a simmer and cook for 5 minutes.
  4. Return the beef to the skillet and stir in the sour cream. Season with salt and pepper.
  5. Cook for an additional 5 minutes, or until the sauce is thickened.
  6. Serve the beef stroganoff over egg noodles or rice, garnished with parsley.
