Potatoes
2 lbs, cubed
Extra virgin olive oil
3 tablespoons
Garlic
3 cloves, minced
Fresh rosemary
2 tablespoons, chopped, plus extra for garnish
Salt
1 teaspoon or to taste
Black pepper
1/2 teaspoon or to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the cubed potatoes, olive oil, minced garlic, chopped rosemary, salt, and pepper. Toss until the potatoes are well coated.
  3. Transfer the potatoes to a baking sheet, spreading them out in a single, even layer. This helps them cook evenly and get that desired crispy exterior.
  4. Bake for 25-30 minutes, or until the potatoes are golden brown and crispy. Halfway through the baking time, give the potatoes a stir to ensure they brown evenly.
  5. Remove the potatoes from the oven and let them rest for a few minutes. This allows the crispy exterior to set.
  6. Serve hot, garnished with additional fresh rosemary if desired. These potatoes pair wonderfully with roast meats or hearty stews.
