Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the cubed potatoes, olive oil, minced garlic, chopped rosemary, salt, and pepper. Toss until the potatoes are well coated.
- Transfer the potatoes to a baking sheet, spreading them out in a single, even layer. This helps them cook evenly and get that desired crispy exterior.
- Bake for 25-30 minutes, or until the potatoes are golden brown and crispy. Halfway through the baking time, give the potatoes a stir to ensure they brown evenly.
- Remove the potatoes from the oven and let them rest for a few minutes. This allows the crispy exterior to set.
- Serve hot, garnished with additional fresh rosemary if desired. These potatoes pair wonderfully with roast meats or hearty stews.
Tips
- For best results, use starchy potatoes like Russets or Yukon Golds. They yield the crispiest exterior and fluffiest interior.
- Feel free to experiment with other herbs like thyme, parsley or even a sprinkle of smoked paprika for a different flavor profile.
