Ingredients

Original recipe serves 8

Milk
1/2 cup
Egg
1 large
Unsalted butter
1/2 cup, cold and cubed
Sugar
1/4 cup
Salt
1/2 teaspoon
Baking powder
1 tablespoon
All-purpose flour
2 cups

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and sugar. Whisk all these together until they're well mixed.
  3. Introduce the cold, cubed butter to the dry mixture. Using a pastry cutter or even your fingers, cut the butter into the mixture until it takes on the appearance of coarse crumbs.
  4. In a separate bowl, briskly whisk together the large egg and milk until it's well combined.
  5. Gradually, add the egg-milk mixture to the dry ingredients, stirring continuously until the mixture is just combined. Be careful not to overmix as it can make the scones tough.
  6. Empty the dough onto a lightly floured surface and knead gently a few times to bring it together.
  7. Shape the dough into a round that's about 1 inch thick. Using a sharp knife, cut the dough into 8 equal wedges.
  8. Place the wedges onto the prepared baking sheet, spacing them a bit apart.
  9. Bake for 15-18 minutes, or until the scones turn a beautiful golden brown and are cooked through.
  10. Serve these warm, ideally with clotted cream, your favorite jam, or even just a pat of butter. Enjoy!

Tips

  • 💡 For a sweeter variation, add 1/2 cup of currants or dried cranberries to the dough. For a savory twist, omit the sugar and add 1/2 cup of grated cheddar and some chives.
