Ingredients

Original recipe serves 10

All-purpose flour
500 grams
Granulated sugar
150 grams
Active dry yeast
7 grams
Eggs
2
Milk
100 milliliters, warm
Butter
80 grams, softened
Lemon zest
1 tablespoon
Orange blossom water
1 tablespoon
Candied fruit
100 grams
Pine nuts
50 grams
Powdered sugar
for dusting

Instructions

  1. In a large mixing bowl, combine the all-purpose flour, granulated sugar, and active dry yeast.
  2. To this mixture, add the eggs, warm milk, softened butter, lemon zest, and orange blossom water. Mix well until a soft dough begins to form.
  3. Transfer the dough to a floured surface and knead until it becomes smooth and elastic, this should take about 10 minutes.
  4. Place the kneaded dough in a greased bowl and cover with a clean cloth. Allow the dough to rise in a warm place for about an hour, or until it has doubled in size.
  5. Once the dough has risen, preheat your oven to 180°C (350°F).
  6. Gently roll out the dough into a large rectangle and transfer it onto a lined baking sheet.
  7. Decoratively arrange the candied fruit on the dough and sprinkle the pine nuts evenly over the top.
  8. Bake in the preheated oven for about 25 minutes, or until the Coca de San Juan has turned a beautiful golden brown color.
  9. Allow the coca to cool completely before dusting with a generous amount of powdered sugar. Slice and serve as a delightful dessert or a sweet breakfast treat.
