- Brown sugar
- 3/4 cup, packed
- Egg
- 1 large
- Vanilla extract
- 1 teaspoon
- Shredded coconut
- 1 cup, unsweetened
- Semi-sweet chocolate chips
- 1 cup
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy, about 2-3 minutes.
- Add the egg and vanilla extract to the butter mixture and mix until well combined, scraping down the sides of the bowl as needed.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Fold in the shredded coconut and chocolate chips until evenly distributed throughout the dough.
- Using a rounded tablespoon, drop the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart to allow for spreading.
- Bake for 10-12 minutes, or until the edges are golden brown and the centers are set but still slightly soft.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
