Servings: 24

Ingredients

All-purpose flour
2 cups
Baking soda
1 teaspoon
Salt
1/2 teaspoon
Unsalted butter
1 cup, softened
Granulated sugar
3/4 cup
Brown sugar
3/4 cup, packed
Egg
1 large
Vanilla extract
1 teaspoon
Shredded coconut
1 cup, unsweetened
Semi-sweet chocolate chips
1 cup

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy, about 2-3 minutes.
  3. Add the egg and vanilla extract to the butter mixture and mix until well combined, scraping down the sides of the bowl as needed.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Fold in the shredded coconut and chocolate chips until evenly distributed throughout the dough.
  7. Using a rounded tablespoon, drop the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart to allow for spreading.
  8. Bake for 10-12 minutes, or until the edges are golden brown and the centers are set but still slightly soft.
  9. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  10. Enjoy these delicious cookies warm or store them in an airtight container for later!
