Ingredients

Fresh grated coconut
1 cup
Green chilies
2-3, adjust to taste
Roasted chana dal
2 tablespoons
Ginger
1-inch piece, chopped
Salt
1/2 teaspoon, or to taste
Water
1/4 to 1/2 cup, adjust for consistency
Oil
1 tablespoon
Mustard seeds
1/2 teaspoon
Curry leaves
10-12 leaves

Instructions

  1. In a blender, combine the fresh grated coconut, green chilies, roasted chana dal, chopped ginger, salt, and water. Blend until the mixture is smooth and creamy, adding more water as necessary to achieve your desired consistency.
  2. Transfer the blended chutney to a serving bowl, and set aside.
  3. In a small pan, heat the oil over medium heat. Once hot, add the mustard seeds and let them splutter, which should take about 30 seconds.
  4. Add the curry leaves to the pan and sauté for a few seconds until they become aromatic and crispy.
