Shredded coconut
1/2 cup
Salt
1/2 teaspoon
Curry powder
1 tablespoon
Coconut oil
3 tablespoons, divided
Popcorn kernels
1/2 cup

Instructions

  1. Heat 1 tablespoon of coconut oil in a large pot over medium heat.
  2. Add the popcorn kernels and cover the pot. Shake the pot every few seconds to ensure even heat distribution and prevent the kernels from burning.
  3. Once the popping slows down to about 2 seconds between pops, remove the pot from the heat and let it sit, covered, for a minute to allow any remaining kernels to pop.
  4. Meanwhile, in a small saucepan, melt the remaining 2 tablespoons of coconut oil over low heat. Stir in the curry powder and salt until well combined. This will form your curry-infused coconut oil.
  5. Drizzle the curry-infused coconut oil over the popped popcorn. Toss to coat evenly.
  6. Sprinkle the shredded coconut over the popcorn. Toss again to distribute evenly.
  7. Serve the popcorn immediately for the best experience, or store it in an airtight container for up to 3 days.
