Instructions
- Heat 1 tablespoon of coconut oil in a large pot over medium heat.
- Add the popcorn kernels and cover the pot. Shake the pot every few seconds to ensure even heat distribution and prevent the kernels from burning.
- Once the popping slows down to about 2 seconds between pops, remove the pot from the heat and let it sit, covered, for a minute to allow any remaining kernels to pop.
- Meanwhile, in a small saucepan, melt the remaining 2 tablespoons of coconut oil over low heat. Stir in the curry powder and salt until well combined. This will form your curry-infused coconut oil.
- Drizzle the curry-infused coconut oil over the popped popcorn. Toss to coat evenly.
- Sprinkle the shredded coconut over the popcorn. Toss again to distribute evenly.
- Serve the popcorn immediately for the best experience, or store it in an airtight container for up to 3 days.
Tips
- For a more intense flavor, toast the shredded coconut before adding to the popcorn.
- If you prefer a spicier kick, add a pinch of cayenne pepper to the curry-infused coconut oil.
