Ingredients

White rice
1 cup, rinsed
Coconut milk
1 cup
Water
1 cup
Salt
1/2 teaspoon
Sugar
1 tablespoon
Fresh cilantro
1/4 cup, chopped (for garnish)

Instructions

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice, coconut milk, water, salt, and sugar. Stir to combine.
  3. Bring the mixture to a boil over medium heat, stirring occasionally to prevent sticking.
  4. Once boiling, reduce the heat to low, cover the saucepan with a tight-fitting lid, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  5. Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes to allow the flavors to meld.
  6. Fluff the rice gently with a fork and stir in the chopped cilantro for a burst of fresh flavor.
