Cod Alla Romana

- 3 tablespoons Olive oil
- 1 medium, diced Onion
- 2 (1 red and 1 yellow), sliced Bell peppers
- 3, minced Garlic cloves
- 4 cups, diced (or one 28-ounce can of crushed tomatoes) Fresh tomatoes
- 1/2 cup White wine
- 4 (6-ounce) fillets, skinless Cod fillets

Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the diced onion and sliced bell peppers to the skillet. Sauté for about 5 minutes, or until the vegetables have softened and the onion is translucent.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the diced fresh tomatoes (or canned crushed tomatoes) to the skillet. Cook for about 5 minutes, allowing them to break down and release their juices.
- Pour in the white wine, stirring well to combine. Let the mixture simmer for about 5 minutes to reduce slightly.
- Season the cod fillets with salt and pepper on both sides, then gently place them into the sauce. Cover the skillet and cook for approximately 10 minutes, or until the fish is opaque and flakes easily with a fork.
- Once cooked, sprinkle with freshly chopped parsley before serving.
