Authentic Colcannon Hash

Ingredients
- Green onions (4, finely chopped)
- Butter (4 tablespoons)
- Salt and pepper (to taste)
- Cabbage (1/2 head, finely chopped)
- Garlic (2 cloves, minced)
- Onion (1, finely chopped)
- Bacon (4 strips, cut into small pieces)
- Potatoes (4 large, peeled and cubed)
Instructions
- Start by boiling the potatoes in a large pot of salted water until they're tender, which should take about 15 minutes. Once done, drain them and set aside for later use.
- Meanwhile, heat a large skillet over medium heat and cook the bacon until it's crispy. Use a slotted spoon to remove the bacon from the skillet and set it aside, leaving the bacon grease in the skillet for added flavor.
- In the bacon grease, cook the finely chopped onion and minced garlic until they're soft and fragrant, which should take about 5 minutes.
- Add the finely chopped cabbage to the skillet and cook until it's wilted, stirring occasionally. This process should take around 5 minutes.
- Now, add the cooked potatoes to the skillet. Mash them slightly with a fork to blend them with the other ingredients, and season the mixture with salt and pepper to taste.
- Stir in the butter and finely chopped green onions, then add the crispy bacon back to the skillet. Make sure everything is well combined.
- Cook the hash over medium heat until it's crispy on the bottom, about 5 minutes. Then, flip it over and cook it for another 5 minutes on the other side.
- Serve the colcannon hash hot, garnished with extra butter and chopped green onions on top for an added burst of flavor. Enjoy this Irish culinary delight!
