Ingredients

Ramen noodles
2 packages
Cucumber
1 large, julienned
Carrot
1 large, julienned
Red bell pepper
1, sliced
Green onions
3, chopped
Fresh cilantro
1/4 cup, chopped
Sesame seeds
2 tablespoons, toasted
Fresh ginger
1 tablespoon, grated
Garlic
2 cloves, minced

Instructions

  1. Cook the ramen noodles according to the package instructions. Drain and rinse under cold water to cool them down, then set aside.
  2. In a large mixing bowl, combine the julienned cucumber, carrot, sliced red bell pepper, chopped green onions, and cilantro.
  3. Prepare the dressing by whisking together the lime juice, soy sauce, rice vinegar, honey, sesame oil, grated ginger, and minced garlic in a small bowl.
