Ingredients

  • Scallions (3, chopped)
  • Cilantro (1/2 cup, chopped)
  • Cucumber (1, thinly sliced)
  • Lime (juice of 1)

  • Soy sauce (2 tablespoons)
  • Fish sauce (2 tablespoons)
  • Garlic (4 cloves, minced)
  • Ginger (2-inch piece, sliced)
  • Chicken broth (4 cups)
  • Jasmine rice (2 cups)
  • Whole chicken (1 (about 3-4 pounds))

Instructions

  1. In a large pot, bring 3 quarts of water to a boil. Add the whole chicken, ginger slices, and half of the minced garlic. Reduce the heat to a simmer and cook for about 30-40 minutes, or until the chicken is fully cooked.
  2. Remove the chicken from the pot and let it cool. Once cooled, shred the chicken into bite-sized pieces, removing and discarding the skin and bones.
  3. While the chicken is cooling, rinse the jasmine rice under cold water until the water runs clear. Drain the rice well and add it to another pot with the chicken broth. Cook the rice according to the package instructions.
  4. In a small bowl, whisk together the remaining minced garlic, fish sauce, soy sauce, sugar, and lime juice to create the dipping sauce.
