Instructions
- Start by rinsing the broken rice under cold water until the water runs clear. Cook the rice according to package instructions and set aside.
- Prepare the marinade for the pork chops by combining the fish sauce, sugar, minced garlic, and minced lemongrass in a bowl. Marinate the pork chops in this mixture for at least 30 minutes.
- While the pork is marinating, prepare the pickled vegetables. In a bowl, mix together the sliced cucumber, julienned carrots, sliced radishes, and chopped green onions. Set this aside to allow the flavors to meld together.
- Preheat a grill or grill pan over medium-high heat. Grill the marinated pork chops for about 4-5 minutes per side, or until cooked through and beautifully charred.
- In a separate frying pan, heat the vegetable oil over medium heat. Fry the eggs sunny-side up or according to your preference.
- To serve, divide the cooked broken rice among four plates. Top each plate with a grilled pork chop, a fried egg, and a generous portion of the pickled vegetables. Season with salt and pepper to taste. Serve hot and enjoy your authentic Saigon-style feast!
