Com Tam Sai Gon - Saigon-Style Broken Rice

Instructions
- Start by rinsing the broken rice under cold water until the water runs clear. Cook the rice according to package instructions and set aside.
- Prepare the marinade for the pork chops by combining the fish sauce, sugar, minced garlic, and minced lemongrass in a bowl. Marinate the pork chops in this mixture for at least 30 minutes.
- While the pork is marinating, prepare the pickled vegetables. In a bowl, mix together the sliced cucumber, julienned carrots, sliced radishes, and chopped green onions. Set this aside to allow the flavors to meld together.
- Preheat a grill or grill pan over medium-high heat. Grill the marinated pork chops for about 4-5 minutes per side, or until cooked through and beautifully charred.
