Servings: 4

Ingredients

Chicken breast
2, thinly sliced
Lemongrass
2 stalks, finely minced
Red chili
1, sliced
Garlic
2 cloves, minced
Onion
1, sliced
Bell pepper
1, sliced
Carrot
1, julienned
Soy sauce
2 tablespoons
Fish sauce
1 tablespoon
Sugar
1 teaspoon
Cooked rice
4 cups
Fresh cilantro
for garnish
Lime wedges
for serving

Instructions

  1. In a bowl, combine the thinly sliced chicken, finely minced lemongrass, minced garlic, soy sauce, fish sauce, and sugar. Mix well to ensure the chicken is fully coated in the marinade. Let it sit for at least 10 minutes to allow the flavors to meld together.
  2. Heat oil in a wok or large skillet over high heat. Once the oil is hot, add the marinated chicken. Stir-fry until the chicken is cooked through, approximately 5 minutes.
  3. Add the sliced onion, bell pepper, carrot, and red chili to the wok or skillet. Continue to stir-fry for another 3-4 minutes until the vegetables are tender-crisp, ensuring to keep them vibrant and crunchy.
  4. Divide the steamed rice among four plates. Top each serving of rice with the chicken and vegetable stir-fry.
  5. Garnish with fresh cilantro and serve with lime wedges on the side for squeezing over the top of the dish before eating. The lime adds a refreshing burst of acidity that perfectly balances out the richness of the stir-fry.
