Ingredients
- All-purpose flour
- 1 1/2 cups
- Baking powder
- 3 1/2 teaspoons
- Sugar
- 1 tablespoon
- Salt
- 1/2 teaspoon
- Milk
- 1 1/4 cups
- Egg
- 1
- Vanilla extract
- 1/2 teaspoon
- Confetti sprinkles
- 1/2 cup
- Butter
- 2 tablespoons, melted plus extra for brushing the skillet
- Maple syrup

Instructions
- In a large bowl, whisk together the all-purpose flour, baking powder, sugar, and salt. This forms the dry mixture for your pancakes.
- In another bowl, beat the egg, and then add the milk and vanilla extract. Whisk well to combine these wet ingredients.
- Gradually pour the wet ingredients into the bowl with the dry mixture, stirring gently until the batter is just combined. Be careful not to over mix to keep the pancakes fluffy.
- Fold in the confetti sprinkles into the batter, distributing them evenly.
- Heat a non-stick skillet or griddle over medium heat. Brush with a small amount of melted butter to prevent sticking.
- Pour 1/4 cup of pancake batter onto the heated skillet. Cook until the surface of the pancake is covered with bubbles and the edges look set, about 2-3 minutes.
- Flip the pancake with a spatula and cook for another 1-2 minutes, or until golden brown and cooked through.
- Repeat the process with the remaining batter, adding more butter to the skillet as needed.
- Serve the pancakes warm, drizzled with maple syrup and a sprinkle of extra confetti on top for a festive touch.
