Copos - Costa Rican Rice Pudding

- 1 cup, rinsed White rice
- 2 cups Water
- 4 cups Whole milk
- 3/4 cup Granulated sugar
- 1 teaspoon Vanilla extract
- 1 Cinnamon stick
- 1/4 teaspoon Salt

Instructions
- In a large pot, combine the rinsed rice and water. Bring to a boil over high heat.
- Once boiling, reduce the heat to low, cover the pot, and let the rice simmer for 15 minutes, or until the water is absorbed and the rice is tender.
- Add the whole milk, granulated sugar, cinnamon stick, vanilla extract, and salt to the pot. Stir well to combine all ingredients.
- Increase the heat to medium and cook the mixture, stirring frequently, for about 45 minutes, or until the rice is fully tender and the pudding has thickened to a creamy consistency.
- Once cooked, remove the cinnamon stick and let the pudding cool slightly before serving. Copos can be enjoyed warm or chilled according to your preference.
