Serves 6

Ingredients

Corn kernels
2 cups, fresh or frozen
Black beans
1 can (15 oz), rinsed and drained
Red bell pepper
1, diced
Red onion
1/2, finely chopped
Cilantro
1/4 cup, chopped
Avocado
1, diced
Olive oil
3 tablespoons
Lime juice
2 tablespoons, freshly squeezed
Cumin
1 teaspoon
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon

Instructions

  1. In a large mixing bowl, combine the corn kernels, black beans, diced red bell pepper, finely chopped red onion, and chopped cilantro. Toss gently to mix.
  2. In a small bowl, whisk together the freshly squeezed lime juice, olive oil, cumin, salt, and black pepper until well combined.
  3. Pour the dressing over the salad mixture and toss to ensure the vegetables are evenly coated.
  4. Gently fold in the diced avocado to keep it intact.
  5. Cover the bowl and refrigerate the salad for at least 30 minutes before serving. This allows the flavors to meld beautifully.
  6. Serve chilled as a refreshing side dish or a light main course.

Tips

  • 💡 For added heat, consider adding diced jalapeño or a dash of hot sauce.
  • 💡 Substitute lime juice with lemon juice for a different citrus twist.
  • 💡 This salad can be made ahead of time. Just add the avocado right before serving to prevent browning.
