1 medium, chopped
Garlic
2 cloves, minced
Corn kernels
1 cup, fresh or frozen
Fresh spinach
6 cups, washed and chopped
Coconut milk
1 cup
Salt

Black pepper

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Once hot, add the chopped onion and sauté for 3-4 minutes until the onion is translucent and fragrant.
  2. Add the minced garlic to the skillet and sauté for an additional minute, being careful not to allow it to burn.
  3. Stir in the corn kernels and cook for another 2 minutes, allowing the corn to soften slightly.
  4. Add the fresh spinach to the skillet. Cook, stirring occasionally, until the spinach is wilted, about 3-4 minutes.
  5. Pour the coconut milk into the skillet and stir well to combine all the ingredients.
  6. Season the mixture with salt and pepper to taste, adjusting to your preference.
  7. Cook for an additional 2-3 minutes, allowing the flavors to meld and the mixture to heat through.
  8. Serve hot as a delectable side dish alongside grilled meats, seafood, or as part of a vegetarian feast.
