Ingredients

Original recipe serves 4

Fresh parsley
1/4 cup, chopped
Parmesan cheese
1/3 cup, grated
Black pepper
1/2 teaspoon, freshly ground
Salt
1/2 teaspoon, or to taste
Garlic
2 cloves, minced
Butter
2 tablespoons
Green beans
2 cups, trimmed and cut into 1-inch pieces
Corn
2 cups, fresh or frozen

Instructions

  1. In a large pot, bring water to a boil. Add the corn and green beans, cooking for about 5 minutes until they are tender-crisp. Drain and set them aside.
  2. In a skillet, melt the butter over medium heat. Once melted, add the minced garlic and sauté for 1 minute until fragrant, being careful not to burn it.
  3. Add the cooked corn and green beans to the skillet. Season with salt and freshly ground black pepper. Cook for an additional 3-4 minutes, stirring occasionally, until the vegetables are heated through.
  4. Remove the skillet from heat and generously sprinkle the mixture with grated Parmesan cheese and chopped fresh parsley.
  5. Toss gently to combine and serve hot as a delectable side dish with your favorite main course.

Tips

  • 💡 For an added kick, consider sprinkling a pinch of red pepper flakes when cooking the garlic.
  • 💡 You can substitute the green beans with snap peas or asparagus for different textures.
  • 💡 If using frozen corn, there's no need to thaw; just add it directly to the boiling water with the green beans.
