Corn and Leek Fritters

These crispy corn and leek fritters are packed with flavor and make a delicious appetizer or side dish.

Ingredients

  • Vegetable oil (2 tablespoons)
  • Milk (1/4 cup)
  • Egg (1, beaten)
  • Black pepper (1/4 teaspoon)
  • Salt (1/2 teaspoon)
  • Baking powder (1 teaspoon)
  • Cornmeal (1/2 cup)
  • All (purpose flour - 1/2 cup)
  • Leek (1, thinly sliced)
  • Corn kernels (1 cup)

Instructions

  1. In a large bowl, combine the corn kernels, leek, flour, cornmeal, baking powder, salt, and black pepper.
  2. In a separate bowl, whisk together the beaten egg and milk.
  3. Pour the egg mixture into the corn mixture and stir until well combined.
  4. Heat the vegetable oil in a skillet over medium heat.
  5. Drop spoonfuls of the corn batter into the skillet and flatten slightly with the back of a spoon.
  6. Cook for 3-4 minutes on each side, or until golden brown and crispy.
  7. Remove the fritters from the skillet and drain on a paper towel-lined plate.
  8. Serve hot as an appetizer or side dish.
