
Corn and Leek Fritters
These crispy corn and leek fritters are packed with flavor and make a delicious appetizer or side dish.
Ingredients
- Vegetable oil (2 tablespoons)
- Milk (1/4 cup)
- Egg (1, beaten)
- Black pepper (1/4 teaspoon)
- Salt (1/2 teaspoon)
- Baking powder (1 teaspoon)
- Cornmeal (1/2 cup)
- All (purpose flour - 1/2 cup)
- Leek (1, thinly sliced)
- Corn kernels (1 cup)
Instructions
- In a large bowl, combine the corn kernels, leek, flour, cornmeal, baking powder, salt, and black pepper.
- In a separate bowl, whisk together the beaten egg and milk.
- Pour the egg mixture into the corn mixture and stir until well combined.
- Heat the vegetable oil in a skillet over medium heat.
- Drop spoonfuls of the corn batter into the skillet and flatten slightly with the back of a spoon.
- Cook for 3-4 minutes on each side, or until golden brown and crispy.
- Remove the fritters from the skillet and drain on a paper towel-lined plate.
- Serve hot as an appetizer or side dish.
