Ingredients

Wild rice
1 cup
Vegetable broth
2 cups
Olive oil
2 tablespoons
Garlic
3 cloves, minced
Red bell pepper
1, diced
Green onions
4, sliced
Corn kernels
1 1/2 cups, fresh or frozen
Fresh parsley
1/4 cup, chopped
Salt
to taste
Black pepper
to taste

Instructions

  1. In a saucepan, bring the vegetable broth to a boil.
  2. Add the wild rice, reduce the heat to low, cover, and simmer for 30-40 minutes or until the rice is tender and the liquid is absorbed.
  3. While the rice is cooking, heat the olive oil in a large skillet over medium heat.
  4. Add the minced garlic, diced red bell pepper, and sliced green onions to the skillet. Sauté for about 5 minutes or until the vegetables are tender and fragrant.
  5. Stir in the corn kernels and cook for an additional 3-4 minutes, allowing them to heat through.
  6. Once the wild rice is cooked, fluff it with a fork and add it to the skillet with the sautéed vegetables. Stir well to combine all the ingredients.
  7. Season the pilaf with salt and black pepper to taste. Mix in the chopped fresh parsley for a pop of color and freshness.
