Ingredients
- Wild rice
- 1 cup
- Vegetable broth
- 2 cups
- Olive oil
- 2 tablespoons
- Garlic
- 3 cloves, minced
- Red bell pepper
- 1, diced
- Green onions
- 4, sliced
- Corn kernels
- 1 1/2 cups, fresh or frozen
- Fresh parsley
- 1/4 cup, chopped
- Salt

Instructions
- In a saucepan, bring the vegetable broth to a boil.
- Add the wild rice, reduce the heat to low, cover, and simmer for 30-40 minutes or until the rice is tender and the liquid is absorbed.
- While the rice is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic, diced red bell pepper, and sliced green onions to the skillet. Sauté for about 5 minutes or until the vegetables are tender and fragrant.
- Stir in the corn kernels and cook for an additional 3-4 minutes, allowing them to heat through.
- Once the wild rice is cooked, fluff it with a fork and add it to the skillet with the sautéed vegetables. Stir well to combine all the ingredients.
