Ingredients
- Canned sweet corn
- 15 oz, drained
- Canned creamed corn
- 15 oz
- Corn muffin mix
- 8.5 oz
- Sour cream
- 1 cup
- Unsalted butter
- 1/2 cup, melted
- Shredded cheddar cheese
- 2 cups, divided
- Salt
- 1/2 teaspoon
- Black pepper
- 1/4 teaspoon
- Chopped fresh chives or green onions
- 2 tablespoons (optional for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a 2-quart casserole dish.
- In a large mixing bowl, combine the drained sweet corn, creamed corn, corn muffin mix, sour cream, melted butter, salt, and black pepper. Stir until all ingredients are well incorporated and the mixture is smooth.
- Pour the mixture into the prepared casserole dish, spreading it evenly.
- Bake in the preheated oven for 45 minutes, or until the top is golden brown and the edges are bubbling.
