Canned sweet corn
15 oz, drained
Canned creamed corn
15 oz
Corn muffin mix
8.5 oz
Sour cream
1 cup
Unsalted butter
1/2 cup, melted
Shredded cheddar cheese
2 cups, divided
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon
Chopped fresh chives or green onions
2 tablespoons (optional for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 2-quart casserole dish.
  2. In a large mixing bowl, combine the drained sweet corn, creamed corn, corn muffin mix, sour cream, melted butter, salt, and black pepper. Stir until all ingredients are well incorporated and the mixture is smooth.
