Crispy Corn Fritters

- 2 cups, fresh or frozen Corn kernels
- 1 cup All-purpose flour
- 2 large Eggs
- 1/2 cup Milk
- 1 tablespoon Granulated sugar
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- for frying Vegetable oil

Instructions
- In a large bowl, combine the corn kernels, flour, eggs, milk, sugar, salt, and pepper. Mix until well combined; the batter should be thick but pourable.
- Heat about 1/4 inch of vegetable oil in a large skillet over medium heat until shimmering.
- Using a tablespoon or small ice cream scoop, drop spoonfuls of the corn mixture into the skillet. Flatten slightly with the back of a spoon.
- Fry the fritters for about 2-3 minutes on each side, or until they are golden brown and crispy. Avoid overcrowding the pan; fry in batches if necessary.
- Once done, transfer the fritters to a plate lined with paper towels to drain excess oil.
