Ingredients

Original recipe serves 4

Corn kernels
2 cups, fresh or frozen
All-purpose flour
1 cup
Eggs
2 large
Milk
1/2 cup
Granulated sugar
1 tablespoon
Salt
1 teaspoon
Black pepper
1/2 teaspoon
Vegetable oil
for frying

Instructions

  1. In a large bowl, combine the corn kernels, flour, eggs, milk, sugar, salt, and pepper. Mix until well combined; the batter should be thick but pourable.
  2. Heat about 1/4 inch of vegetable oil in a large skillet over medium heat until shimmering.
  3. Using a tablespoon or small ice cream scoop, drop spoonfuls of the corn mixture into the skillet. Flatten slightly with the back of a spoon.
  4. Fry the fritters for about 2-3 minutes on each side, or until they are golden brown and crispy. Avoid overcrowding the pan; fry in batches if necessary.
  5. Once done, transfer the fritters to a plate lined with paper towels to drain excess oil.
  6. Serve warm with the zesty dipping sauce on the side.
