Servings: 2

Ingredients

Butter
2 tablespoons, softened
Rye bread
4 slices
Russian dressing
1/4 cup
Swiss cheese
4 slices
Sauerkraut
1 cup, drained
Corned beef
8 ounces, sliced

Instructions

  1. Begin by preparing the Russian dressing if you prefer homemade. Combine 1/4 cup mayonnaise, 2 tablespoons ketchup, 1 tablespoon horseradish, 1 teaspoon Worcestershire sauce, and a dash of salt and pepper in a bowl. Mix well and set aside.
  2. Preheat a skillet or griddle over medium heat.
  3. Spread a generous amount of Russian dressing on one side of each slice of rye bread.
  4. Layer 4 ounces of corned beef, 1/2 cup of sauerkraut, and 2 slices of Swiss cheese on two slices of bread, dressing side up.
  5. Top with the remaining slices of bread, dressing side down, to form two sandwiches.
  6. Spread softened butter on the outside of each sandwich to ensure a golden, crispy crust.
  7. Place the sandwiches in the preheated skillet or griddle and cook until the bread is toasted and the cheese is melted, about 4-5 minutes per side. Press down gently with a spatula to enhance the toasting.
  8. Remove from heat and let the sandwiches cool for a minute before slicing them in half.
  9. Serve hot, with extra Russian dressing on the side for dipping, if desired.
