Instructions
- Begin by spreading one side of each slice of rye bread with the Thousand Island dressing, ensuring an even coating.
- On two slices of bread (dressing-side up), layer two slices of Swiss cheese, followed by all of the sliced corned beef. Add the drained sauerkraut on top, then finish with the remaining Swiss cheese.
- Top with the other two slices of bread, dressing-side down, to form sandwiches.
- In a large skillet, melt the butter over medium heat. Once the butter is foamy, carefully place the sandwiches in the skillet.
- Cook the sandwiches for about 5 minutes on one side, or until the bread is golden brown and crispy. Carefully flip the sandwiches and cook for an additional 5 minutes on the other side until the cheese is melted and the bread is toasted.
- Remove from the skillet and let sit for a minute before slicing in half. Serve warm.
Tips
- For an extra kick, add a few slices of pickles or jalapeños inside the sandwich.
- You can swap out the Thousand Island dressing for Russian dressing for a different flavor profile.
- If you prefer a healthier option, consider using low-fat Swiss cheese and whole-grain rye bread.
