Watermelon
6 cups, cubed
Fresh mint leaves
1 cup, chopped, plus more for garnish
Lime
2, juiced
White rum
1/4 cup
Sugar
2 tablespoons
Salt
1 pinch

Instructions

  1. In a large bowl, combine the cubed watermelon and chopped mint leaves.
  2. In a separate small bowl, whisk together the juice of two limes, white rum, sugar, and a pinch of salt. Continue whisking until the sugar is fully dissolved. This will be your mojito dressing.
  3. Pour the mojito dressing over the watermelon and mint in the large bowl. Gently toss the salad to ensure all the watermelon pieces are coated with the dressing.
  4. Chill the salad in the refrigerator for at least an hour. This allows the flavors to meld together and the watermelon to absorb the mojito dressing.
