Ingredients

Beef cube steak
4 pieces (about 1 pound)
Salt
1 teaspoon, divided
Black pepper
1 teaspoon, divided
All-purpose flour
1 cup, divided
Eggs
2, beaten
Milk
1/4 cup
Vegetable oil
1 cup (for frying)
Beef broth
2 cups
Additional milk
1/2 cup (for gravy)

Instructions

  1. Begin by seasoning both sides of the beef cube steaks with 1/2 teaspoon salt and 1/2 teaspoon black pepper.
  2. In a shallow dish, place 1/2 cup of flour. In another dish, beat the eggs with 1/4 cup of milk.
  3. Dredge each seasoned steak in the flour, ensuring it's fully coated. Then, dip it into the egg mixture, allowing excess to drip off, and dredge in the flour again for an extra crispy coating.
  4. In a large skillet, heat the vegetable oil over medium heat until hot. Carefully add the coated steaks, frying for about 5 minutes on each side or until they are golden brown and cooked through. Avoid overcrowding the pan; fry in batches if needed.
  5. Once cooked, remove the steaks and drain on paper towels. Keep warm in a low oven while preparing the gravy.
  6. Pour off all but 2 tablespoons of the remaining oil in the skillet. Sprinkle in 2 tablespoons of the leftover flour used for dredging and stir to combine, cooking for about 1 minute to form a roux.
  7. Gradually whisk in the beef broth and 1/2 cup of milk, bringing the mixture to a boil while stirring constantly.
  8. Once boiling, reduce the heat to low and let it simmer for about 10 minutes until the gravy thickens. Season with the remaining 1/2 teaspoon salt and 1/2 teaspoon black pepper to taste.
  9. Serve the crispy country fried steak topped generously with the savory gravy.
