- Potatoes
- 4 medium, diced
- Olive oil
- 2 tablespoons
- Taco seasoning
- 2 tablespoons
- Tortillas
- 8 small (corn or flour)
- Salsa
- 1 cup
- Sour cream
- 1/2 cup
- Shredded cheese
- 1 cup (cheddar or your choice)
- Tomatoes
- 1 cup, diced
- Lettuce
- 2 cups, shredded
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, toss the diced potatoes with olive oil and taco seasoning until evenly coated.
- Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, stirring halfway through, until the potatoes are crispy and golden brown.
- While the potatoes are baking, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side or until pliable.
