Originating from the heart of Mexican cuisine, tacos have been a staple for centuries, offering an endless array of fillings. These potato tacos are not only satisfying but also a great way to enjoy the earthy goodness of potatoes in a fun and portable way!

Ingredients

Potatoes
4 medium, diced
Olive oil
2 tablespoons
Taco seasoning
2 tablespoons
Tortillas
8 small (corn or flour)
Salsa
1 cup
Sour cream
1/2 cup
Shredded cheese
1 cup (cheddar or your choice)
Tomatoes
1 cup, diced
Lettuce
2 cups, shredded

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, toss the diced potatoes with olive oil and taco seasoning until evenly coated.
  3. Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper.
  4. Bake for 20-25 minutes, stirring halfway through, until the potatoes are crispy and golden brown.
  5. While the potatoes are baking, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side or until pliable.
  6. Once the potatoes are done, assemble the tacos by filling each tortilla with a generous amount of roasted potatoes.
  7. Top with shredded lettuce, diced tomatoes, shredded cheese, a dollop of sour cream, and a spoonful of salsa.
  8. Serve the tacos immediately, allowing everyone to customize their toppings.

Tips

  • 💡 For added flavor, consider roasting some garlic cloves alongside the potatoes.
  • 💡 You can also add black beans or corn to the filling for extra nutrition and texture.
  • 💡 Try using different types of cheese like queso fresco or pepper jack for a unique twist.
