1.5 pounds, cut into bite-sized pieces

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Season the brisket generously with salt and pepper.
  3. Heat the olive oil in a large oven-safe pot over medium-high heat. Once the oil is hot, add the brisket and sear on all sides until it develops a beautiful brown crust. Once seared, remove the brisket from the pot and set it aside.
  4. In the same pot, add the chopped onion and minced garlic. Sauté until they become aromatic and the onions turn translucent.
  5. Add in the bite-sized pieces of potatoes, beef broth, Worcestershire sauce, rosemary, and thyme to the pot. Stir everything together until well combined.
