Instructions
- Preheat the oven to 325°F (165°C).
- Season the brisket generously with salt and pepper.
- Heat the olive oil in a large oven-safe pot over medium-high heat. Once the oil is hot, add the brisket and sear on all sides until it develops a beautiful brown crust. Once seared, remove the brisket from the pot and set it aside.
- In the same pot, add the chopped onion and minced garlic. Sauté until they become aromatic and the onions turn translucent.
- Add in the bite-sized pieces of potatoes, beef broth, Worcestershire sauce, rosemary, and thyme to the pot. Stir everything together until well combined.
