Potatoes
4 cups, cubed
Olive oil
3 tablespoons
Garlic
3 cloves, minced
Salt
to taste
Black pepper
to taste
Broccoli
2 cups, chopped
Cheddar cheese
1 1/2 cups, shredded

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, toss the cubed potatoes with olive oil, minced garlic, salt, and pepper until evenly coated.
  3. Spread the seasoned potatoes in a single layer on a baking sheet. Bake in the preheated oven for 20 minutes, or until they are golden brown and crispy on the outside.
  4. While the potatoes are baking, steam the chopped broccoli in a steamer basket over boiling water until tender, about 5-7 minutes.
  5. Once the potatoes are done baking, remove them from the oven. Layer the steamed broccoli over the potatoes, followed by the shredded cheddar cheese.
  6. Return the baking sheet to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  7. Serve hot, garnished with extra salt and pepper to taste. Enjoy!
