Country Potatoes with Broccoli and Cheese

Ingredients
- Potatoes (4 cups, cubed)
- Olive oil (3 tablespoons)
- Garlic (3 cloves, minced)
- Salt (to taste)
- Black pepper (to taste)
- Broccoli (2 cups, chopped)
- Cheddar cheese (1 1/2 cups, shredded)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, toss the cubed potatoes with olive oil, minced garlic, salt, and pepper until evenly coated.
- Spread the seasoned potatoes in a single layer on a baking sheet. Bake in the preheated oven for 20 minutes, or until they are golden brown and crispy on the outside.
- While the potatoes are baking, steam the chopped broccoli in a steamer basket over boiling water until tender, about 5-7 minutes.
- Once the potatoes are done baking, remove them from the oven. Layer the steamed broccoli over the potatoes, followed by the shredded cheddar cheese.
