Country Potatoes with Spinach and Feta

Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, toss the cubed potatoes with 2 tablespoons of olive oil, salt, and pepper until well coated. Spread them evenly on a baking sheet.
- Bake the potatoes for 20-25 minutes, or until they are golden and crispy, tossing halfway through for even cooking.
- While the potatoes are baking, heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the diced onion to the skillet and sauté until it becomes translucent, about 3-4 minutes.
- Stir in the minced garlic and sauté for an additional 1 minute until fragrant.
- Add the fresh spinach to the skillet and cook, stirring occasionally, until it wilts down, about 2-3 minutes.
- Once the potatoes are done baking, add them directly to the skillet with the spinach mixture. Gently stir to combine all the elements.
- Sprinkle the crumbled feta cheese over the top of the potato and spinach mixture. Allow it to warm slightly before serving.
- Serve the country potatoes with spinach and feta immediately while still warm. Enjoy!
