
Country Potatoes with Spinach and Feta

Ingredients
- Salt and pepper (to taste)
- Feta cheese (1/2 cup, crumbled)
- Spinach (2 cups, fresh)
- Garlic (2 cloves, minced)
- Onion (1 medium, chopped)
- Olive oil (2 tablespoons)
- Potatoes (4 medium, cubed)
Instructions
- Preheat the oven to 400°F.
- Toss the cubed potatoes in olive oil, salt, and pepper, then spread them out on a baking sheet.
- Bake the potatoes for 20-25 minutes, or until they are golden and crispy.
- While the potatoes are baking, heat the remaining olive oil in a large skillet over medium heat.
- Add the onion and garlic to the skillet and sauté until the onion is translucent.
- Add the spinach to the skillet and cook until it is wilted.
- Once the potatoes are done, add them to the skillet and stir to combine.
- Sprinkle the feta cheese over the top of the potato and spinach mixture.
