Original recipe serves 4

Potatoes
4 medium, cubed
Olive oil
3 tablespoons, divided
Salt
to taste
Pepper
to taste
Onion
1 medium, diced
Garlic
2 cloves, minced
Spinach
6 cups, fresh
Feta cheese
1 cup, crumbled

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss the cubed potatoes with 2 tablespoons of olive oil, salt, and pepper until well coated. Spread them evenly on a baking sheet.
  3. Bake the potatoes for 20-25 minutes, or until they are golden and crispy, tossing halfway through for even cooking.
  4. While the potatoes are baking, heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat.
  5. Add the diced onion to the skillet and sauté until it becomes translucent, about 3-4 minutes.
  6. Stir in the minced garlic and sauté for an additional 1 minute until fragrant.
  7. Add the fresh spinach to the skillet and cook, stirring occasionally, until it wilts down, about 2-3 minutes.
  8. Once the potatoes are done baking, add them directly to the skillet with the spinach mixture. Gently stir to combine all the elements.
  9. Sprinkle the crumbled feta cheese over the top of the potato and spinach mixture. Allow it to warm slightly before serving.
  10. Serve the country potatoes with spinach and feta immediately while still warm. Enjoy!
