Servings: 4

Ingredients

  • Couscous (1 cup)
  • Water (1 1/4 cups)
  • Salt (1/2 teaspoon)
  • Fresh parsley (1/2 cup, chopped)
  • Feta cheese (1 cup, crumbled)
  • Red onion (1/2, finely chopped)
  • Tomatoes (2, diced)
  • Cucumber (1, diced)
  • Garlic (2 cloves, minced)
  • Lemon juice (2 tablespoons)
  • Olive oil (3 tablespoons)
  • Black pepper (to taste)

Instructions

  1. In a medium saucepan, bring the water and salt to a boil.
  2. Once boiling, add the couscous, stir briefly, and remove from heat. Cover the saucepan with a lid and let it sit for about 5 minutes to allow the couscous to absorb the water.
  3. Fluff the couscous with a fork and transfer it to a large mixing bowl.
  4. In a separate small bowl, whisk together the olive oil, lemon juice, minced garlic, and black pepper to create the dressing.
  5. Add the diced cucumber, tomatoes, chopped red onion, crumbled feta cheese, and fresh parsley to the bowl with the couscous.
  6. Pour the dressing over the couscous mixture and gently toss everything together until well combined.
  7. Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
