Ingredients

Couscous
1 cup
Water
1 1/4 cups
Salt
1/2 teaspoon
Fresh parsley
1/2 cup, chopped
Feta cheese
1 cup, crumbled
Red onion

Tomatoes

Cucumber
1, diced
Garlic
2 cloves, minced
Lemon juice
2 tablespoons
Olive oil
3 tablespoons
Black pepper

Instructions

  1. In a medium saucepan, bring the water and salt to a boil.
  2. Once boiling, add the couscous, stir briefly, and remove from heat. Cover the saucepan with a lid and let it sit for about 5 minutes to allow the couscous to absorb the water.
